Before You Start

Heat the oven to 425掳F, rinse and drain the chickpeas, and have a clean towel ready to dry them.

How To Make It
  1. Pat the chickpeas very dry with a towel so the spices cling well, then toss with the olive oil, paprika, and cumin.
  2. Spread them on a tray in a single layer with space between them.
  3. Roast 25 to 30 minutes, shaking the tray once, until deep golden and crunchy.
  4. Let them cool a few minutes so they firm up, then eat warm.
Fix It: If they are still soft in the middle, they had water left on them; give them 5 more minutes and dry them better next time.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 30 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
