Papaya Lime Boat
Half a papaya, seeds scooped, filled with lime and a little fresh mint. Two minutes to sunshine.

What You Need
Makes 2 plates
Batch it
- 1/2 ripe papaya
- 1 tsp lime juice
- 4 mint leaves
- 1 ripe papaya
- 2 tsp lime juice
- 8 mint leaves
- 1 1/2 ripe papaya
- 3 tsp lime juice
- 12 mint leaves
- 2 ripe papaya
- 4 tsp lime juice
- 16 mint leaves
Before You Start
Rinse the papaya and mint, and have a spoon ready to scoop out the seeds.
How To Make It
Scoop the seeds from the papaya half and spoon the ripe flesh into a bowl, or leave it in the skin as a boat.
Cut the papaya into bite size pieces so they are easy to spear.
Squeeze the lime juice evenly over the fruit.
Scatter the torn mint over the top and serve cold.
Fix It: If the papaya tastes flat, a little more lime brightens it right up.
