Before You Start

Pit the dates, line a small dish, and clear a shelf in the fridge.

How To Make It
  1. Pulse the dates in a food processor until they clump into a sticky paste.
  2. Add the cocoa, walnuts, and salt and pulse until the mix holds together when you press it between two fingers.
  3. Press the mix firmly into a small lined dish so it sets in an even slab.
  4. Chill 30 minutes to firm up, then cut into squares.
Fix It: If the mix will not hold together, pulse in one or two more dates, because their stickiness is what binds it.
