Before You Start

Line a small tray with parchment and set out the almonds, chocolate chips, and salt before you turn on the heat.

How To Make It
  1. Toast the almonds in a dry pan over medium heat, 3 to 4 minutes, tossing often, until they smell nutty and turn a shade darker.
  2. Melt the chocolate chips gently, stirring, 1 to 2 minutes, until smooth and glossy with no lumps.
  3. Fold the almonds into the chocolate until every nut is coated.
  4. Spoon small clusters onto the lined tray and sprinkle them with the sea salt.
  5. Chill, about 20 minutes, until firm and set, then keep them in the fridge.
Fix It: If the chocolate seizes into a grainy paste, it got too hot; stir in a few drops of warm oil to bring it back smooth.
