Before You Start

Have a jar or bowl ready and the coconut milk, chia, maple, and vanilla measured out.

How To Make It
  1. Stir the chia seeds, coconut milk, maple syrup, and vanilla together in a jar.
  2. Wait 5 minutes, then stir again so the seeds do not clump.
  3. Cover and chill overnight, until it sets thick like pudding.
  4. Top with the mixed berries and eat it cold.
Fix It: If it is still runny in the morning, stir in a spoonful more chia and give it another 20 minutes to thicken.
