Before You Start

Pull the ground turkey out for a few minutes, cube the squash, trim the green beans, rinse the spinach, mince the garlic, and have the cooked rice ready to serve under it.

How To Make It
  1. Steam the cubed squash in a covered pan with a splash of water over medium heat, 6 to 8 minutes, until fork tender, then set it aside.
  2. Steam the green beans in a covered pan with a splash of water, 6 to 8 minutes, until tender but still bright green, then set aside.
  3. Warm the olive oil in the same pan over medium heat, add the ground turkey with the garlic and sage, and cook, breaking it up, 6 to 8 minutes, until no pink remains and it reaches 165°F in the center, then spoon off the fat so the bowl does not go greasy.
    165°F
  4. Add the spinach and cook, 2 to 3 minutes, until it wilts down into the turkey.
  5. Fold the squash and green beans through the turkey and cook 1 to 2 minutes, until everything is steaming.
  6. Spoon over the cooked white rice and serve.
Fix It: If the turkey sticks and tears, give it a minute to brown before you stir, since it releases from the pan on its own once it is seared.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
