Before You Start

Separate and rinse the lettuce leaves, shred the cabbage, dice the zucchini, and trim and cut the green beans small so the filling moves without pause.

How To Make It
  1. Warm the olive oil in a skillet over medium, about 1 minute, until it shimmers.
  2. Add the ground turkey and cook, breaking it up, 6 to 8 minutes, until no pink remains and it reaches 165°F in the center, then spoon off the fat so the wraps do not go greasy.

  3. Add the cabbage, zucchini, and green beans and cook, stirring, 6 to 8 minutes, until the cabbage wilts and the green beans and zucchini are tender.
  4. Stir in the coconut aminos and cook 1 minute more, until it coats the turkey and vegetables and smells savory.
  5. Spoon the turkey and vegetables into the lettuce leaves, fold, and serve.
Fix It: If the leaves tear as you fold, use two stacked leaves per wrap so they hold the filling instead of splitting.
