What You Need

Before You Start

Press the tofu dry and cube it, dice the carrot, trim the bok choy, grate the ginger, and have the tamari and rice within reach.

How To Make It
  1. Warm the olive oil in a skillet over medium high heat, about 1 minute, until it shimmers.
  2. Add the tofu and sear, turning to color the sides, 6 to 8 minutes, until golden and crisp.
  3. Add the ginger and carrot and cook, stirring, 4 to 5 minutes, until the carrot is just tender.
  4. Add the bok choy and cook, 2 to 3 minutes, until the leaves wilt and the stems are crisp and tender.
  5. Pour in the tamari and toss, about 30 seconds, until it coats everything and sizzles.
  6. Serve over the jasmine rice with the scallion on top.
Fix It: If the tofu sticks to the pan, leave it alone another minute; it releases on its own once it browns.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 14 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
