What You Need

Before You Start

Press and cube the tofu, cut the broccoli into florets, rinse the spinach, and have the jasmine rice warm and ready.

How To Make It
  1. Season the tofu, warm a pan over medium high, and sear 5 to 6 minutes, turning, until golden and crisp on the edges, then set it aside.
  2. Cook the broccoli in the same pan with a splash of water 4 to 5 minutes, until bright green and just tender.
  3. Pour in the coconut milk, coconut aminos, ginger, and lime and simmer 3 to 4 minutes, until it warms and thickens slightly.
  4. Stir in the spinach and cook, 1 to 2 minutes, until it wilts, then fold in the basil.
  5. Return the tofu to the pan and toss to coat, then serve over the cooked jasmine rice.
Fix It: If the sauce tastes flat, add a squeeze more lime and a pinch of salt to wake up the coconut milk.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 16 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
