What You Need
Makes 2 plates Batch it
Before You Start

Pat the chicken dry, cut the broccoli into florets, grate the ginger, and have the rice warm so the bowl comes together quickly.

How To Make It
  1. Season the chicken and sear it in a hot pan over medium high, 12 to 15 minutes, turning once, until golden and it reaches 165°F in the center, then set it aside.

  2. Add the broccoli to the pan and cook, 3 to 4 minutes, until bright green and just tender.
  3. Add the spinach and cook, 1 to 2 minutes, until it wilts.
  4. Pour in the coconut milk, coconut aminos, ginger, and lime and simmer, 2 to 3 minutes, until slightly thickened, then fold in the basil.
  5. Slice the chicken and serve it with the broccoli, spinach, and sauce over the jasmine rice.
Fix It: If the sauce breaks and looks oily, take it off the heat and stir in a splash of water to bring it back together.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 18 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
