Before You Start

Have the cooked quinoa ready, cube the tempeh, and dice the zucchini, broccoli, and bell pepper so the bowl comes together quickly.

How To Make It
  1. Warm the olive oil in a skillet over medium high, about 1 minute, until it shimmers.
  2. Add the cubed tempeh and cook, turning, 5 to 6 minutes, until golden on the sides.
  3. Add the broccoli and bell pepper and cook, 5 to 6 minutes, until the broccoli is bright green and fork tender.
  4. Add the zucchini and cook, 3 to 4 minutes, until just tender.
  5. Spoon the cooked quinoa into a bowl, pile on the tempeh and vegetables, finish with the lemon juice, toss lightly, and serve.
Fix It: If the tempeh tastes plain, toss it with a splash of the lemon juice first so it soaks up flavor before serving.
