Before You Start

Rinse and chop the parsley and mint, trim the green beans and slice the zucchini, and have the cooked quinoa ready.

How To Make It
  1. Warm the olive oil in a skillet over medium high, about 1 minute, until it shimmers.
  2. Add the green beans and cook, stirring now and then, 5 to 6 minutes, until bright and just tender.
  3. Add the zucchini and cook, 3 to 4 minutes, until softened and lightly golden, then take the pan off the heat.
  4. Fold the cooked quinoa into the warm vegetables, then stir in the parsley, mint, and lemon juice.
  5. Toss so the herbs and lemon coat everything, then serve.
Fix It: If it tastes flat, it likely needs salt and a little more lemon; add both a pinch at a time until it brightens.
