Before You Start

Rinse and drain the black beans, dice the sweet potato small so it cooks fast, cut the broccoli into small florets, and rinse the spinach.

How To Make It
  1. Put the diced sweet potato in a microwave safe bowl with a splash of water, cover, and cook, 4 to 6 minutes, until a fork slides in easily and the pieces are tender.
  2. Steam or saute the broccoli with a splash of water, 5 to 6 minutes, until bright green and fork tender.
  3. Warm the black beans in a small pot, 2 to 3 minutes, until steaming, then add the spinach and stir, 1 to 2 minutes, until it wilts.
  4. Spoon the beans and spinach into a bowl and pile on the sweet potato and broccoli.
  5. Finish with the avocado and lime juice, toss lightly, and serve.
Fix It: If the sweet potato still feels firm in the middle, give it another minute, since undercooked pieces stay starchy and bland.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
