What You Need

Before You Start

Dice the onion and tomato, trim the green beans, mince the garlic, and rinse the chickpeas and spinach so everything is ready to layer in.

How To Make It
  1. Warm the olive oil in a pot over medium and cook the onion and garlic, stirring, 3 to 4 minutes, until soft and fragrant, then stir in the smoked paprika for 30 seconds until it smells toasty.
  2. Add the tomato, chickpeas, green beans, and broth and simmer, 12 to 15 minutes, until the tomato breaks down, the broth thickens, and the green beans are tender.
  3. Stir the spinach through, 1 to 2 minutes, until it wilts and turns bright green, then finish with a drizzle of olive oil.
  4. Taste, adjust the seasoning, and serve warm.
Fix It: If it tastes flat, a pinch of salt and a squeeze of acid lifts the whole pot; the chickpeas soak up seasoning.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
