Before You Start

Pull the rotisserie chicken and shred it, cut the broccoli into florets, rinse the spinach, and have the cooked rice ready so the bowl comes together fast.

How To Make It
  1. Steam the broccoli in a covered pan with a splash of water over medium heat, 5 to 6 minutes, until bright green and just tender, then set it aside.
  2. In the same pan, wilt the spinach with a splash of water, 2 to 3 minutes, until glossy and collapsed.
  3. Add the pulled chicken and warm it through, 3 to 4 minutes, until steaming hot and reheated to 165°F.

  4. Spoon the brown rice into a bowl, pile on the chicken, broccoli, and spinach, drizzle with the olive oil, and serve.
Fix It: If the bowl feels dry, add another small drizzle of olive oil or a squeeze of lemon to bring it together.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
