Before You Start

Rinse the black beans, cut the broccoli into even florets, rinse the spinach, and have the cooked quinoa ready so the bowl comes together fast.

How To Make It
  1. Steam the broccoli in a covered pan with a splash of water over medium heat, 5 to 6 minutes, until bright green and just tender, then set it aside.
  2. In the same pan over medium heat, add the spinach with a splash of water and cook, 2 to 3 minutes, until it wilts down and turns glossy.
  3. Warm the black beans in the pan, stirring now and then, 4 to 5 minutes, until steaming and fragrant.
  4. Spoon the cooked quinoa into a bowl and pile on the beans, broccoli, and spinach.
  5. Top with the avocado and cilantro, drizzle with the lime juice, and serve.
Fix It: If it tastes flat, add a pinch of salt and a little more lime, since beans and grains need brightness to wake them up.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
