What You Need
Makes 2 plates Batch it
Before You Start

Pull the pork out about 10 minutes ahead, pat it dry, slice the mushrooms and zucchini, rinse the spinach, and season the pork with salt and pepper while the pan heats.

How To Make It
  1. Warm a dry pan over medium high, about 2 minutes, until a drop of water skitters and sizzles.
  2. Warm the olive oil in a skillet over medium, about 1 minute, until it shimmers.
  3. Sear the pork, turning to brown all sides, 6 to 8 minutes, until it reaches 145°F in the center, then move it to a plate to rest 3 minutes.

  4. In the same pan, melt the butter with the garlic, about 1 minute, until it foams and smells fragrant.
  5. Add the mushrooms and cook, 5 to 6 minutes, until browned and their liquid has cooked off.
  6. Add the zucchini and cook, 3 to 4 minutes, until tender and lightly golden.
  7. Add the spinach and cook, 1 to 2 minutes, until it wilts.
  8. Slice the pork, plate it with the buttered mushrooms, zucchini, and spinach, and serve warm.
Fix It: If the pork is still faintly pink at 145°F it is safe to eat, but if you want it firmer, cover it and let the rest carry it a little further.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 22 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
