What You Need
Makes 1 plate Batch it

Before You Start

Halve the bok choy and slice the mushrooms while the pan heats.

How To Make It
  1. Stir the miso and ginger with 1 tsp water into a thin paste.
  2. Warm the sesame oil in a skillet over medium high heat, about 1 minute, then lay in the salmon and sear 4 minutes, until the underside is golden.
  3. Turn the salmon, brush it with the miso paste and cook 2 to 3 minutes more, until it flakes and reaches 145°F; move it to a plate.

  4. Add the mushrooms and bok choy with a splash of water and cook 3 to 4 minutes, until the bok choy wilts and the mushrooms soften.
  5. Spoon the brown rice into a bowl, add the vegetables and salmon, and top with the scallion.
Fix It: Miso scorching? Lower the heat; it burns faster than the fish cooks.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
