What You Need

Before You Start

Pat the pork dry, dice the pepper and zucchini, trim the green beans, mince the garlic, and warm the rice.

How To Make It
  1. Season and sear the pork tenderloin in a pan with the olive oil over medium high, 8 to 10 minutes, turning to brown all sides, until it reaches 145°F in the center, then set it aside to rest.

  2. Add the bell pepper, zucchini, and green beans to the same pan and cook, 6 to 7 minutes, until softened and lightly charred.
  3. Stir in the cumin and garlic and cook, about 1 minute, until fragrant, then squeeze in the lime off the burner.
  4. Slice the pork and serve it with the vegetables over the brown rice, finished with the cilantro.
Fix It: If the pork is charred outside but under 145°F inside, lower the heat and cover the pan to finish it gently.

  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 18 minutes, shaking the basket halfway, until cooked through and lightly crisp.
