What You Need

Before You Start

Season the sirloin, dice the bell pepper and zucchini, trim the green beans, and mince the garlic.

How To Make It
  1. Season the beef and sear it in the olive oil over high heat, 2 to 3 minutes a side, until browned and it reaches 145°F in the center, then set it aside to rest 3 minutes.

  2. Cook the bell pepper and green beans in the same pan, 4 to 5 minutes, until crisp tender.
  3. Add the zucchini and cook 3 to 4 minutes, until tender and lightly golden.
  4. Add the cumin and garlic and toss, about 1 minute, until fragrant, then finish with the lime and cilantro.
  5. Slice the beef and serve over the brown rice with the vegetables.
Fix It: If the cumin tastes raw, toast it in the oil a few seconds longer so it turns nutty and warm.

  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 16 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
