Before You Start

Pat the shrimp dry, mince the garlic, trim the green beans, dice the cucumber, and cook or warm the quinoa so the bowl is ready when the shrimp come off the heat.

How To Make It
  1. Sear the shrimp in the olive oil over medium high heat, 3 to 4 minutes, turning once, until they curl and turn pink and opaque and reach 145°F, then set them aside.
    145°F
  2. Steam the green beans, 6 to 8 minutes, until tender but still bright green.
  3. Add the garlic and spinach to the pan and cook, 1 to 2 minutes, until the garlic is fragrant and the spinach wilts.
  4. Dress the shrimp with the lemon and parsley, and fold the diced cucumber through fresh.
  5. Spoon the shrimp, green beans, and spinach over the quinoa, sprinkle the smoked paprika, and serve.
Fix It: If the shrimp turn rubbery they overcooked; pull them the moment they turn pink, they firm up as they sit.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 12 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
