What You Need

Before You Start

Slice the carrots thin so they soften in time, and cut the zucchini into half moons.

How To Make It
  1. Simmer the vegetable broth, smoked paprika, garlic, and lemon juice in a wide pan for 2 minutes until fragrant.
  2. Add the sliced carrots and steam covered for 7 minutes until just tender.
  3. Add the zucchini and cook for 3 minutes until tender.
  4. Nestle in the cod, cover, and poach for 8 minutes until the fish flakes easily and reaches 145°F.

  5. Stir the spinach into the broth for the last 2 minutes until wilted.
  6. Plate everything and finish with fresh parsley.
Fix It: If the carrots are still firm when the fish is done, lift the cod out and simmer them a few minutes more.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
