One plate is the amount the calories and protein above are for.

Before You Start

Cut the chicken, cook the quinoa ahead and mince the garlic.

How To Make It
  1. Warm the olive oil in a skillet over medium high heat and sear the chicken 6 to 7 minutes, turning, until golden and it reads 165°F.
    165°F
  2. Add the broccoli and a splash of water, cover and steam 3 to 4 minutes, until bright green and tender.
  3. Stir in the garlic and spinach 1 minute, until the spinach wilts, then squeeze half the lemon over everything.
  4. Spoon over the quinoa and serve with the other lemon half.
Fix It: Chicken sticking? Leave it 30 seconds more; it lets go when the crust forms.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
