What You Need

Before You Start

Pat the tofu dry and cut it into cubes, shred the carrot, rinse the spinach, mince the garlic and ginger, and have the cooked rice warm.

How To Make It
  1. Warm a little oil in a skillet over medium high, about 1 minute, until it shimmers.
  2. Add the tofu and sear, turning now and then, 6 to 8 minutes, until golden and crisp on all sides, then set it aside.
  3. Add the carrot and cook, 4 to 5 minutes, until it softens and turns bright.
  4. Add the spinach and cook, 2 to 3 minutes, until it wilts down and turns glossy.
  5. Off the heat, toss the tofu, carrot, and spinach with the coconut aminos, sesame oil, garlic, ginger, and sesame seeds.
  6. Spoon everything over the brown rice and serve.
Fix It: If the raw garlic tastes too sharp tossed in cold, warm the mix in the pan for 30 seconds to mellow it.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 16 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
