Before You Start

Cube the chicken, cut the broccoli into florets, rinse the spinach, mince the garlic, and warm the rice so the bowl comes together the moment the chicken is done.

How To Make It
  1. Sear the chicken in a hot pan over medium high, 6 to 8 minutes, until golden and it reaches 165°F in the center with no pink, adding the garlic for the last minute, then set it aside.

  2. Steam the broccoli in a covered pan with a splash of water, 3 to 4 minutes, until bright green and just tender.
  3. Add the spinach and cook, 2 to 3 minutes, until it wilts down.
  4. Toss the chicken and vegetables with the coconut aminos, sesame oil, and rice vinegar off the burner so they coat without burning.
  5. Serve over the brown rice with a scatter of sesame seeds.
Fix It: If the chicken browns too fast on the outside, drop the heat to medium, because it needs time to reach 165°F without charring.
