Before You Start

Pat the pork dry, warm the rice, and cut the broccoli into even florets so they cook at the same pace.

How To Make It
  1. Season the pork and sear it in a hot pan over medium high, turning to brown all sides, 10 to 12 minutes, until it reaches 145°F in the center, then rest it a few minutes and slice.
    145°F
  2. Cook the broccoli florets in the same pan or a splash of water, 3 to 4 minutes, until crisp and tender and bright green.
  3. Add the spinach and cook, stirring, 1 to 2 minutes, until it wilts down.
  4. Toss the vegetables with the coconut aminos, sesame oil, garlic, ginger, and sesame seeds off the heat so the garlic stays fresh.
  5. Serve the sliced pork and vegetables over the warm brown rice.
Fix It: If the pork looks pink at the center but the outside is done, cover the pan off the heat for a few minutes so it finishes to 145°F gently.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 16 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
