What You Need
Makes 2 plates Batch it
Before You Start

Pull the sirloin out 10 minutes ahead and pat it dry, cut the broccoli into florets, rinse the spinach, grate the ginger, and slice the scallions.

How To Make It
  1. Warm a skillet over medium high heat, about 1 minute, until a drop of water sizzles.
  2. Season the sirloin, add it, and sear, turning once, 3 to 4 minutes per side, until deep brown and it reaches 145°F in the center, then rest it 3 minutes.

  3. Add the broccoli florets to the pan and cook 5 to 6 minutes, until bright green and just tender.
  4. Add the spinach and cook, 1 to 2 minutes, until it wilts.
  5. Glaze the vegetables with the tamari, ginger, and sesame oil off the heat, then top with the sesame seeds and scallion.
  6. Slice the rested sirloin and serve it with the vegetables over the cooked rice.
Fix It: If the outside browns before it reaches 145°F, lower the heat and give it another minute so the center catches up.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 14 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
