Before You Start

Pat the beef sirloin dry and season it, slice the mushrooms, dice the tomato, mince the garlic, rinse the spinach, and have the cooked rice warm.

How To Make It
  1. Warm the olive oil in a skillet over medium high, about 2 minutes, until it shimmers.
  2. Sear the beef sirloin, turning once, 4 to 6 minutes, until it reaches 145°F in the center, then rest 3 minutes and slice it thin.
    145°F
  3. Add the mushrooms to the pan and cook, 5 to 6 minutes, until browned and their liquid has cooked off.
  4. Add the garlic and diced tomato and simmer, 3 to 4 minutes, until the tomato breaks down into a loose sauce.
  5. Stir in the spinach and cook, 1 to 2 minutes, just until it wilts, then fold in the basil.
  6. Spoon over the rice, top with the sliced beef, and serve.
Fix It: If the tomato tastes sharp, add a small pinch of salt and a splash of water to round it out.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 16 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
