Before You Start

Drain the chickpeas and olives, trim the green beans, dice the tomato, rinse the spinach, and have the feta ready to crumble at the end.

How To Make It
  1. Warm the olive oil in a skillet over medium heat, about 1 minute, until it shimmers.
  2. Add the green beans and cook, stirring now and then, 6 to 7 minutes, until bright green and just tender.
  3. Add the spinach and diced tomato and cook, 2 to 3 minutes, until the spinach wilts and the tomato softens.
  4. Warm the chickpeas in the pan, 2 to 3 minutes, until heated through, then take the pan off the heat.
  5. Pile everything into a bowl, add the olives, and toss gently with a squeeze of lemon.
  6. Crumble the feta over the top and serve warm.
Fix It: If it tastes bland, the olives and feta are salty, so reach for a squeeze of lemon or a crack of pepper before adding more salt.
