What You Need

Before You Start

Halve the brussels sprouts, strip and chop the kale, pat the cod dry, and mince the garlic.

How To Make It
  1. Set the oven to 400°F and line a sheet pan with parchment.
  2. Roast the brussels sprouts on the pan, 15 to 18 minutes, until the edges are crisp and browned.
  3. Season the cod with the smoked paprika and garlic and set it on a second lined pan.
  4. Bake the cod, 10 to 12 minutes, until it flakes easily with a fork and reaches 145°F.

  5. Steam the kale, 3 to 4 minutes, until it wilts and turns deep green.
  6. Plate the vegetables, set the cod on top, squeeze the lemon juice over, and serve.
Fix It: If the cod looks underdone in the center, give it another 2 minutes in the oven and check that it flakes.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 20 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
