Before You Start

Press the tofu dry and cube it, cut the broccoli and bok choy, mince the garlic, grate the ginger, and slice the scallions.

How To Make It
  1. Warm a nonstick skillet over medium high heat, about 1 minute, until a drop of water sizzles.
  2. Season the tofu, add it, and sear, turning to color the sides, 8 to 10 minutes, until golden and crisp.
  3. Add the broccoli and cook, stirring, 4 to 5 minutes, until bright green and just tender.
  4. Add the bok choy and cook 2 to 3 minutes, until the leaves wilt and the stems are tender.
  5. Return the tofu and, off the heat, finish with the coconut aminos, ginger, garlic, sesame oil, and scallion.
  6. Serve over the cooked rice.
Fix It: If the tofu sticks, leave it another minute; it releases on its own once it browns.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 18 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
