What You Need

Before You Start

Pat the pork tenderloin dry and season it, cut the broccoli into florets, chop the bok choy, mince the garlic and ginger, and slice the scallions so the bowl finishes fast.

How To Make It
  1. Sear the pork tenderloin in the sesame oil in a hot pan, 8 to 10 minutes, turning to brown all sides, until it reaches 145°F in the center, then set it aside.

  2. Cook the broccoli in the same pan with a splash of water, 3 to 4 minutes, until bright green and just tender.
  3. Add the bok choy and cook, 2 to 3 minutes, until the leaves wilt and the stalks are just tender.
  4. Toss the vegetables with the coconut aminos, ginger, garlic, and scallion off the heat.
  5. Slice the pork, spoon it and the vegetables over the brown rice, and serve warm.
Fix It: If the broccoli goes limp and dull, it overcooked; pull it while it is still bright and squeaky for the best bite.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 17 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
