What You Need

Before You Start

Dice the chicken and zucchini, slice the mushrooms, trim the green beans, mince the garlic, and warm the rice so it is ready to fold in.

How To Make It
  1. Sear the chicken in the olive oil over medium high, 5 to 7 minutes, until golden and it reaches 165°F in the center with no pink remaining, then set it aside.

  2. Add the mushrooms to the pan and cook, 5 to 6 minutes, until browned and their liquid has cooked off.
  3. Add the garlic and zucchini and cook, 3 to 4 minutes, until the zucchini is tender.
  4. Steam the green beans in a covered pan with a splash of water, 6 to 8 minutes, until tender but still bright green.
  5. Return the chicken, fold in the rice, and warm it through, 1 to 2 minutes, until steaming.
  6. Add the green beans, finish with a squeeze of lemon, and serve.
Fix It: If the chicken sticks to the pan, leave it alone another minute, since it releases on its own once it is properly seared.

  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 21 minutes, shaking the basket halfway, until cooked through and lightly crisp.

  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
