Before You Start

Slice the chicken and cut the zucchini into ribbons, slice the mushrooms, rinse the spinach, mince the garlic, and grate the parmesan so the sauce comes together without the chicken overcooking.

How To Make It
  1. Melt the butter in a pan over medium heat, then add the sliced chicken and cook, 5 to 6 minutes, turning once, until golden and it reaches 165°F in the center with no pink, then set it aside.

  2. Addand mushrooms and cook, 4 to 5 minutes, until browned and their liquid cooks off.
  3. Add the zucchini ribbons and cook, 3 to 4 minutes, until they soften and turn bright.
  4. Add the spinach and cook, 1 to 2 minutes, until it wilts.
  5. Pour in the heavy cream and stir in the parmesan, 2 to 3 minutes, until it melts into a smooth glossy sauce.
  6. Return the chicken, season with salt and pepper, toss to coat, and serve warm.
Fix It: If the sauce breaks or looks oily, pull it off the heat and stir in a splash of warm cream to bring it back together.
