Before You Start

Cook the whole wheat fettuccine ahead and keep a splash of its water; it loosens the sauce if it gets thick.

How To Make It
  1. Blend the white beans, milk, parmesan and garlic until completely smooth, about 1 minute.
  2. Warm the olive oil in a large skillet over medium high heat and cook the chicken 6 to 7 minutes, turning, until golden and it reads 165°F, then move it to a plate.
    165°F
  3. Add the broccoli florets and a splash of water to the skillet, cover and steam 3 to 4 minutes, until bright green and just tender.
  4. Pour in the white bean sauce, add the cooked fettuccine and the spinach, and toss 2 minutes over low heat, until the sauce is hot and clings to the pasta.
  5. Return the chicken to the pan, toss once and serve.
Fix It: Sauce too thick? Stir in 1 tbsp water at a time until it coats the fettuccine and turns glossy.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
