Before You Start

Pat the pork dry, mince the lemongrass and garlic, shred the cabbage, chop the bok choy, and cook the vermicelli so it is ready when the pork rests.

How To Make It
  1. Season the pork and sear it in a hot pan, turning to brown all sides, 10 to 12 minutes, until it reaches 145°F in the center, then set it aside to rest.

  2. Add the cabbage to the same pan with a splash of water and cook, 6 to 7 minutes, until softened and lightly golden.
  3. Add the bok choy and lemongrass and cook, 2 to 3 minutes, until the leaves wilt and the stalks are just tender.
  4. Toss the vegetables with the garlic, herbs, and a squeeze of lime off the heat.
  5. Slice the pork and serve it with the vegetables over the vermicelli.
Fix It: If the herbs taste harsh, add more lime; the acid softens their bite and brightens the plate.

  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 20 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
