Before You Start

Pat the ground turkey dry, shred the cabbage, dice the bell pepper, rinse the spinach, and drain the black beans so they are ready to add.

How To Make It
  1. Add the ground turkey to a hot skillet and cook, breaking it up, 6 to 8 minutes, until no pink remains and it reaches 165°F in the center, then spoon off the fat so the bowl does not go greasy.

  2. Push the turkey to one side, add the cabbage and bell pepper, and cook, 5 to 6 minutes, until the cabbage softens and wilts down.
  3. Add the spinach, black beans, and corn and cook, 2 to 3 minutes, until the spinach wilts and the beans are hot.
  4. Spoon everything into a bowl, top with the avocado and salsa, and serve warm.
Fix It: If the turkey sticks and tears, let it sit undisturbed a minute before you stir; it releases on its own once it browns.
