Before You Start

Cube the summer squash, warm the rice, and mince the garlic so everything moves smoothly once the pan is going.

How To Make It
  1. Warm the olive oil in a skillet over medium and cook the ground turkey with the garlic and sage, breaking it up, 6 to 8 minutes, until no pink remains and it reaches 165°F in the center, then spoon off the fat so the dish does not go greasy.

  2. Add the summer squash and cook, stirring, 5 to 6 minutes, until it softens and picks up a little color.
  3. Add the spinach and cook, stirring, 1 to 2 minutes, until it wilts down.
  4. Fold everything together and warm through, about 2 minutes, until heated evenly.
  5. Spoon over the warm rice and serve.
Fix It: If the squash falls apart into mush, it cooked a touch long; fold it in gently at the end so it keeps some shape.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
