What You Need

Before You Start

Pat the pork dry and season it, cut the broccoli into florets, and cook the rice if it is not ready.

How To Make It
  1. Sear the pork tenderloin in a hot pan, 4 to 5 minutes per side, until deep golden and it reaches 145°F in the center, then set it aside to rest.

  2. Cook the broccoli in the same pan with a splash of water, 3 to 4 minutes, until bright green and just tender.
  3. Add the spinach and cook, 1 to 2 minutes, until it wilts.
  4. Pour in the coconut milk, coconut aminos, ginger, and lime and simmer, 2 to 3 minutes, until it thickens slightly, then fold in the basil.
  5. Slice the pork and serve it with the broccoli, spinach, and sauce over the jasmine rice.
Fix It: If the sauce gets too thick, loosen it with a splash of water; if it is too thin, simmer another minute.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
