What You Need

Before You Start

Pat the sirloin dry and season it, trim the green beans, rinse the spinach, and mince the garlic.

How To Make It
  1. Season the beef sirloin, warm the olive oil in a pan over medium high, and sear 3 to 4 minutes a side, until browned and it reaches 145°F in the center, then set it aside.

  2. Rest the sirloin 3 minutes, then slice it thin against the grain.
  3. Cook the green beans in the same pan 5 to 6 minutes, until bright green and just tender with a little bite.
  4. Add the spinach and cook, 1 to 2 minutes, until it wilts.
  5. Bloom the smoked paprika, garlic, and saffron in a little olive oil, about 1 minute, until fragrant, then toss the vegetables through.
  6. Serve the beef and vegetables over the cooked rice.
Fix It: If the green beans are still squeaky and raw, add a splash of water and cover the pan a minute to steam them tender.

  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 14 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
