Before You Start

Dice the zucchini and slice the pepper before the pan heats.

How To Make It
  1. Warm the olive oil in a skillet over medium high heat, about 1 minute, until it shimmers.
  2. Add the zucchini and bell pepper and cook 4 to 5 minutes, until tender at the edges.
  3. Add the cauliflower rice and cook 3 minutes, stirring, until hot.
  4. Push it aside, add the shrimp, garlic and smoked paprika and cook 2 to 3 minutes, turning once, until the shrimp are pink and curled and reach 145°F.

  5. Toss everything together with half the lemon, scatter the parsley and serve with the other half.
Fix It: Shrimp curling into tight O's? They are overcooked; pull them at a loose C next time.
