Before You Start

Pull the chicken from the fridge, heat the oven to 400°F, and cube the potato and cut the carrot, broccoli, and zucchini so they roast evenly.

How To Make It
  1. Heat the oven to 400°F, cube the potato, slice the carrot, cut the broccoli into florets, and slice the zucchini.
  2. Toss the potato, carrot, broccoli, and zucchini with the olive oil and dried herbs and spread them in one layer on a tray.
  3. Roast 22 to 26 minutes, until the edges are golden and a fork slips into the potato easily.
  4. Meanwhile, sear the chicken in a hot pan, 4 to 5 minutes a side, until browned and it reaches 165°F in the center with no pink remaining.

  5. Let the chicken rest a couple of minutes, then plate with the vegetables and serve.
Fix It: If the outside browns before the center reaches 165°F, move the chicken to a lower heat and give it a few more minutes.

  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 26 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
