What You Need

Before You Start

Pat the pork dry and season it, slice the mushrooms and zucchini, rinse the spinach, and mince the garlic so the pan work flows.

How To Make It
  1. Season the pork tenderloin all over with salt and pepper.
  2. Warm the olive oil in a skillet over medium, about 1 minute, until it shimmers.
  3. Sear the pork in a hot pan, 3 to 4 minutes per side, until deep golden and it reaches 145°F in the center, then move it to a board to rest 3 minutes.

  4. In the same pan, melt the butter with the garlic, add the mushrooms, and cook, 5 to 6 minutes, until softened and browned and their liquid has cooked off.
  5. Add the zucchini and cook, 3 to 4 minutes, until tender and lightly golden.
  6. Add the spinach and cook, 1 to 2 minutes, until it wilts.
  7. Slice the pork, plate it with the buttered vegetables, and serve hot.
Fix It: If the pork is browning too fast before it reaches 145°F, lower the heat and cover the pan so the center catches up.

  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 20 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
