Before You Start

Drain and rinse the chickpeas, dice the sweet potato small, slice the carrot, and have the cooked quinoa ready to serve under the stew.

How To Make It
  1. Warm a splash of water or a little olive oil in a large pot over medium, about 1 minute, until it steams.
  2. Add the carrot and cook, stirring, 4 to 5 minutes, until it begins to soften.
  3. Add the chickpeas, sweet potato, and diced tomato, pour in enough water to nearly cover, and stir in the cumin and cinnamon.
  4. Bring to a boil over high, about 4 to 5 minutes, until it bubbles hard, then lower to a gentle simmer.
  5. Simmer, stirring now and then, 20 to 25 minutes, until the sweet potato is fork tender and the sauce thickens.
  6. Stir in the spinach and cook 1 to 2 minutes, until wilted.
  7. Taste, season, and spoon over the cooked quinoa to serve.
Fix It: If the stew tastes thin, mash a few chickpeas against the side of the pot to thicken it and deepen the flavor.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
