What You Need

Before You Start

Press and cube the tofu, dice the bell pepper and zucchini, trim the green beans, mince the garlic, and have the cooked rice ready.

How To Make It
  1. Sear the cubed tofu in the olive oil over medium high heat, 8 to 10 minutes, turning, until golden and crisp at the edges, then set it aside.
  2. Add the bell pepper and green beans and cook 4 to 5 minutes, until softened and lightly charred at the edges.
  3. Add the zucchini and cook 3 to 4 minutes, until tender.
  4. Stir in the cumin and garlic and cook about 1 minute, until fragrant, then return the tofu.
  5. Squeeze in the lime, scatter the cilantro on top, and serve over the rice.
Fix It: If the spices taste raw, give them a full minute in the hot pan, since blooming them in oil is what rounds out their flavor.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 20 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
