What You Need
Makes 2 plates Batch it
Before You Start

Pat the beef sirloin dry and season it, drain and rinse the black beans, shred the cabbage, rinse the spinach, and have the cooked rice warm.

How To Make It
  1. Warm the olive oil in a skillet over medium high, about 2 minutes, until it shimmers.
  2. Sear the beef sirloin, turning once, 4 to 6 minutes, until it reaches 145°F in the center, then rest 3 minutes and slice it thin.

  3. Add the cabbage to the pan and cook, 4 to 5 minutes, until it wilts and softens.
  4. Add the black beans, cumin, and garlic and cook, 3 to 4 minutes, until the beans are hot through and smell toasty.
  5. Stir in the spinach and cook, 1 to 2 minutes, until it wilts, then finish with a squeeze of lime and the cilantro off the heat.
  6. Spoon over the rice, top with the sliced beef, and serve.
Fix It: If the beans look dry, add a splash of water so they stay saucy instead of pasty.

  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 16 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
