What You Need

Before You Start

Rinse and cook the quinoa, press and cube the tofu, trim the green beans, rinse the spinach, and mince the garlic.

How To Make It
  1. Season the tofu, warm the olive oil in a pan over medium high, and sear, turning, 6 to 8 minutes, until golden and crisp on the edges, then set it aside.
  2. Cook the green beans in the same pan 5 to 6 minutes, until bright green and just tender.
  3. Add the spinach and garlic and cook, 1 to 2 minutes, until the spinach wilts and turns bright green.
  4. Dress the vegetables with the lemon and parsley off the heat so the garlic stays mild.
  5. Serve the tofu and vegetables over the quinoa, dusted with the smoked paprika.
Fix It: If the tofu released a lot of water and would not brown, press it longer next time; a drier cube crisps instead of steaming.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 12 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
