Before You Start

Pat the pork tenderloin dry and season it, cut the broccoli into florets, mince the garlic and ginger, and warm the rice.

How To Make It
  1. Sear the pork tenderloin in a hot pan with the sesame oil, 8 to 10 minutes, turning to brown all sides, until it reaches 145°F in the center, then set it aside to rest.
    145°F
  2. Cook the broccoli in the same pan with a splash of water, 3 to 4 minutes, until bright green and just tender.
  3. Add the spinach and cook, 1 to 2 minutes, until it wilts.
  4. Toss the broccoli and spinach with the coconut aminos, garlic, ginger, and sesame seeds off the heat so the garlic stays sweet.
  5. Slice the pork, spoon it and the vegetables over the brown rice, and serve warm.
Fix It: If the pork still looks pink and you are unsure, give it two more minutes and check again for 145°F; tenderloin cooks fast.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 15 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
