Before You Start

Slice the beef thin, mince the garlic, shred the carrot, and have the rice ready so the beef goes straight onto the bowl while it is hot.

How To Make It
  1. Toss the beef with the garlic, coconut aminos, and sesame oil so it is coated before it hits the pan.
  2. Sear the beef in a hot skillet, 2 to 3 minutes, until browned outside and it reaches 145°F, then rest it 3 minutes so the juices settle.
    145°F
  3. Steam or saute the carrot, 4 to 5 minutes, until just tender, and wilt the spinach in a splash of water, 1 to 2 minutes, until soft, then squeeze it dry.
  4. Spoon the cooked rice into the bowl and lay the spinach and carrot over it in sections.
  5. Fry the egg in the same pan, 2 to 3 minutes, until the white is set and the yolk is still soft, then set it on top.
  6. Add the beef, a small dab of gochujang, and finish with the sesame seeds.
Fix It: If the beef steams gray instead of searing, the pan was not hot enough or too crowded; sear it in two smaller batches.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 12 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
Microwave
  1. Add the ingredients you would cook together to a microwave safe bowl along with their liquid.
  2. Cover loosely and microwave in one minute bursts, stirring between each, until hot through.
  3. Let it stand for a minute, then finish and plate the dish as written in the steps above.
