What You Need

Before You Start

Slice the sirloin thin against the grain, mince the garlic and grate the ginger, shred the cabbage, and rinse the spinach so the bowl builds fast.

How To Make It
  1. Stir the beef together with the coconut aminos, garlic, ginger, and sesame oil and let it marinate 5 minutes.
  2. Sear the beef in a hot pan over high heat, 2 to 3 minutes, until caramelized at the edges and it reaches 145°F in the center, then rest it 3 minutes.

  3. In the same pan, cook the cabbage, 4 to 5 minutes, until it wilts and softens.
  4. Add the spinach and cook, 2 to 3 minutes, until it wilts down and turns glossy.
  5. Pile the beef over the brown rice with the cabbage and spinach, then top with the scallions and sesame seeds and serve.
Fix It: If the beef steams instead of searing, your pan is crowded, so cook it in two batches so each piece browns.
Air Fryer
  1. Heat the air fryer to 380F.
  2. Add the ingredients you would cook on the stove or in the oven in a single layer, without crowding the basket.
  3. Cook for about 12 minutes, shaking the basket halfway, until cooked through and lightly crisp.
  4. Let it rest a minute, then finish and plate the dish as written in the steps above.
